The Festive Recipe: "The Winter Wonderland" Red Velvet Cake

This cake is an absolute classic with a British twist. It’s rich, elegant, and looks stunning when sliced. Perfect with a nice cup of tea!

What You’ll Need from Baker Crafts:

  • Vizyon Red Food Colouring Gel (For that iconic deep red hue)

  • Vizyon Vanilla Extract (For a lovely, authentic aroma)

  • Vizyon Cocoa Powder (High quality for a rich base)

  • Katsan Whipping Cream (Or your choice of frosting base)

  • Christmas Cake Toppers (Check our shop for jolly Santas or festive trees!)

Ingredients:

  • 250g Plain Flour

  • 1 tsp Baking Soda & 1 tsp Baking Powder

  • 2 tbsp Vizyon Cocoa Powder

  • 300g Caster Sugar

  • 250ml Vegetable Oil (or Vizyon Pastry Oil)

  • 2 Large Free-range Eggs

  • 250ml Buttermilk (Proper British buttermilk makes it extra moist!)

  • 2 tsp Vizyon Red Food Colouring

  • 1 tsp Vizyon Vanilla Extract

  • 1 tsp Cider Vinegar

For the Frosting:

  • 600g Icing Sugar (sifted)

  • 100g Unsalted Butter (softened)

  • 250g Full-fat Cream Cheese (chilled)

Method:

  1. Preheat & Prep: Heat your oven to 180°C (160°C Fan / Gas Mark 4). Grease and line two 8-inch cake tins.

  2. The Mix: In a large bowl, whisk the sugar and oil. Add the eggs one by one. Mix in the Vizyon Red Colouring, vanilla, and vinegar until the colour is vibrant.

  3. Dry & Wet: Sift the flour, cocoa, and soda. Add to the wet mix in batches, alternating with the buttermilk. Stir until you have a smooth, velvety batter.

  4. Bake: Divide the batter between the tins and bake for 25-30 minutes. A skewer should come out clean. Let them cool completely on a wire rack—patience is key!

  5. The Frosting: Beat the butter and icing sugar until sandy. Add the cream cheese and beat until light and fluffy.

  6. The Decoration: Sandwich the cakes with a thick layer of frosting. Cover the top and sides, creating a "snowy" effect with your spatula. Top with your Baker Crafts festive decorations and a dusting of icing sugar for that final "frosty" look.

Top Tip: Pair a slice of this cake with a bit of clotted cream for a truly indulgent British Christmas treat!
